Desert Dust

We've been working for a while to try and replicate the unique scent found in the air of central Australia. It's dusty and salty and lemony and earthy and dry.

So we've blended together Old Man Saltbush leaves and seeds (Atriplex nummularia), Native Lemongrass (Cymbopogon citratus), Kakadu Plum (Terminalia ferdinandiana), Cut-leaf Mintbush (Prostanthera incisa), and Desert Oak wattleseed (one name for Acacia coriacea).

It's a heady, aromatic blend that is excellent with mediterranean flavours such as eggplant and lamb.
